At Alma’s, we serve up tasty island food which really teases the taste buds, and it is also where I get to do the things I love to do… cooking, meeting people, photographing food and happy customers, inventing and re-inventing recipes. Talk about win-win! I’ve decided to share these experiences through another love of mine — writing. On this blog, we will explore how Caribbean history and culture are inherently ingrained in the way we cook and eat, and share recipes and tips-and-tricks along the way.

I am not sure just when I developed this interest in food but now looking back, it must have always been with me. Why else would I remember in vivid details the taste and texture of the sandwiches in the lunch box of several classmates in elementary school? There were Dorothy’s tomato sandwiches. Thick slices of juicy red tomatoes with a sprinkle of seasoned salt. Brianne’s two slices of soft white bread layered with jam and pure salted butter. A rubbery, wood-oven baked bread with cream cheese in the middle was a regular for Danielle, but it was Vivian’s sandwich which delighted me most. Perfect slices of some sort or pâté and a slice of cheese. The pâté had a flavor you had to get used to. Vivian never acquired the taste because she never ate the thing. We exchanged sandwiches any day that was in her lunch bag.

We will take simple ingredients and combine them in an uncomplicated way. The result? Complex flavours and food that is delicious. So I welcome the housewife who understands the value of home making and being that strong support at the heart of the home. The career driven wife or husband who has to balance work and family. The busy single woman who cooks for family and friends and for her own delight. The ambitious single man who knows how to “put on a pot”. Professional cooks and chefs who have developed recipes through years of experience and learning. Cooking is not a high science, (or if it is we don’t need to always know the theories) it’s more like magic. We put ingredients together and tadaaa!… delicious food (well a few steps in between). I invite you to post your favourite recipes or share that one “secret” ingredient that takes a dish to the next level. I look forward to your comments, recommendations and even disagreements. By the end of the year we should have shared so many recipes that your table at Thanksgiving and Christmas will boast an even more impressive selection of delectable food.
